The Moon Martini Bar & Restaurant opens Oct. 23 in Gastown with Felix Maristany at the helm

The Moon Martini Bar & Restaurant will open Oct. 23 at 59 Powell St. in Gastown, led by chef Felix Maristany.

The Story

The Moon Martini Bar & Restaurant will open on Oct. 23 at 59 Powell St. in Vancouver’s Gastown neighbourhood.

Co-owners Sonia Symoom and Wyatt Rybchinsky lived in the area for years, and the opening marks the next chapter for the pair’s new restaurant and martini-focused bar.

Felix Maristany, formerly chef de cuisine at Michelin-starred Kissa Tanto, is taking the helm as head chef and a partner in The Moon.

Maristany graduated from Vancouver’s Pacific Institute of Culinary Arts and previously worked as sous chef at Cioppino’s before joining Kissa Tanto.

The Moon is designed to be relatively intimate, with a 27-seat dining room plus 11 counter seats overlooking the open kitchen.

Guests can choose from a seasonal à la carte menu or a multicourse experience led by Maristany, whose cooking will draw on influences from his Cuban-American upbringing in Miami, time spent in Spanish kitchens, and years working in Vancouver.

Fermentation and preservation are expected to feature in the kitchen’s approach, with the intent of using seasonal ingredients beyond their usual growing periods.

In addition to dining, the restaurant includes a separate bar at the front focused on martinis and cocktails, along with alcohol-free options and bar snacks.

Zoe Bates will lead the bar team, bringing experience from Ellipsis, The Westin Bayshore and Sula, and she was a Top 4 finalist in the 2026 World Class Canada bartending competition.

Claudia Fandino serves as general manager and wine director, with a beverage program that includes wines from smaller organic producers, sake, and a tea selection developed with O5 Tea.
