The recipe uses whipped egg whites, sugar, vanilla, cornflour and vinegar, baked at 200 F for one hour and cooled before topping with whipping cream and ripe kiwi.
The Story
This kiwi pavlova recipe starts with four egg whites, which are beaten until stiff, then sweetened with one cup of sugar added slowly while continuing to beat until the mixture is very stiff.
In a separate cup, stir together one small teaspoon each of vanilla, cornflour and vinegar, then stir the mixture into the whipped egg whites.
Line a cookie sheet with parchment, pile the meringue mixture onto it, and shape it into a circle with a slight indentation in the centre.
Bake the pavlova for one hour at 200 F, then let it cool completely.
To serve, top the pavlova generously with whipping cream and sliced, ripe kiwi fruit.
